Peri-Peri Chicken Sandwiches — a.k.a. The 5 Seconds of Sammy

THE SANDWICH: The 5 Seconds of Sammy with 5Sauce!

THE INSPIRATION: This sandwich is perfect for Labor Day, because it’s a tribute to 5 Seconds of Summer, a pop-punk band whose name pretty much sums up what the holiday is all about.

The fab four from Australia*Calum Hood, Ashton Irwin, Luke Hemmings and Michael Clifford — just won their first MTV Moonman for their lyric video for their hit, “Don’t Stop.”

So as a congrats to 5SOS (pronounced “five sauce,” of course), this sandwich celebrates two of their obsessions: 1) the “She Looks So Perfect”-level-addictive, piri-piri chicken from the rotisserie chainNando’s; and 2) coffee. Coffee. Yesss.

THE INGREDIENTS:

Peri-Peri sauce by Wildly Delicious. I randomly found this heat-seeker sauce — made with African bird peppers — at Spice It Up, an awesome store in Beach Haven, New Jersey. They carry all manner of delights, including peanut butter in pecan and chai tea flavors. What?

Willoughby’s Coffee — I used this amaze coffee in the Coffee Dipping Sauce for my Donut Chicken Snackers.

Fresh lemon juice

Fresh chopped cilantro

Minced shallot

Pressed garlic cloves

Paprika

Dried cilantro

Chicken thighs

Hot dog buns — Because the 5SOS guys like hot dogs when they’re in NYC.

THE RECIPE:

Coat both sides of the thighs in a dry rub of paprika and dried cilantro.

Get grill marks and crisp up the skin on the thighs at around 600˚ for 5 minutes on each side, then lower the heat to 350˚ and grill until cooked through, about 20 mins on each side.

For the 5SAUCE: Mince one shallot and place in a medium bowl. Add three garlic-pressed garlic cloves. Stir in juice of two whole lemons. Chop about 1/4 cup of fresh cilantro.

Pour half a bottle of Peri-Peri sauce into the bowl. Add 6-8 oz. of freshly brewed, double-strength plunger pot coffee, and stir until combined.

Cook sauce on low heat until it thickens slightly. Set aside to ladle atop sandwiches.

Once chicken is cooked, remove meat from bones and layer into hot dog buns. Spoon 5Sauce onto the chicken. Serve immediately.

THE VERDICT: Both Jorge and Grace gave the 5SOS Sammies their approval. “I’m awake now!” said Grace.
