No-Mayo Spicy Tuna Salad!
THE SANDWICH: An open face No-Mayo Spicy Tuna Salad Sandwich.
THE INSPIRATION:An ex-boyfriend’s super simple, go-to tuna salad recipe.
THE INGREDIENTS:
Store-bought organic English muffins
2 cans of albacore tuna packed in water — I think my ex’s original recipe involved olive oil, so while I don’t use it in my version, feel free to use albacore packed in olive oil, or add some when mixing all the ingredients.
Fresh jalapeños — This is to taste; I usually use 1-2 for 2 cans of tuna, including the seeds, because I like a good kick.
1 small red onion
Juice of 3 limes
Cilantro — Again, to taste. For those of you who would rather eat soap than add cilantro, I think dill or tarragon would make a tasty substitute.
THE RECIPE: Just dice the onion and jalapeños, chop the herbs, add to the tuna and mix with the lime juice. Then layer atop a lettuce leaf on an English muffin half.
And for a fun tuna melt, you can scoop the salad on a muffin half and nuke with cheese on top. Easy peasy!
